before we went to the beach, the girls and i went outside to grab a few shots::

half hour before sunset, my favorite family (second to mine), my camera, and a red barrette. yeah!

we were screaming for light, but i did it.

this is a huge thing, i mean i actually ordered prints, and not only that, i also framed, and hung them! things like this don't normally happen to edlins. but i did it.

i also did a very grown up thing when i took this picture of my pictures. i used my custom white balance. yeah it's only taken me 2 years to figure it out. but i did it.

funny thing. the other day, after i ordered my prints, i waited in agony to see my children printed on paper, i told my mother: "ah! i can't wait for my prints to come!" Mom: "you can't wait for your Prince to come?!"

oh mother...

This is all my stuff for 18 days that goes into that carry-on duffel.

So, guess what? I am, for the very first time, leaving the country. Tomorrow I am leaving for London, and after spending a week there we are going to Ireland for 10 days. Yes. I know. I am f.r.e.a.k.i.n.g. out.

I hope to be able to post while I am there, but who knows.

This is a first of many things for me, first time out of the country, first time of a photography trip, first time to Europe, and the list goes on...

Pesto Pasta Salad

I made this for a picnic that we went to, easy to prepare, and oh so very yummy!

4 cups uncooked bow-tie pasta
1 cup fresh pesto
2 Tbsp chopped green olives, or olive tapenade
1/4 cup pine nuts
1 cup frozen peas, defrosted (or fresh if you can get them)
12 ounces cherry tomatoes, halved
Several fresh basil leaves, coarsely chopped (or a fair amount of dried)
1 Tbsp olive oil
Salt and pepper

Method

1 Cook pasta according to instructions on the package. Make sure the water is salted (at least a half teaspoon per quart). Remove pasta from heat and strain when pasta is cooked, but still firm (al dente).

2 Put pasta in a big bowl. Mix in fresh basil pesto, green olives, and pine nuts. Gently mix in cherry tomatoes, peas, fresh basil leaves and olive oil. Salt and pepper to taste. Chill or serve at room temperature.

Serves 6-8.

Pita!

I just made this pita bread, it was easy and very yummy!

1 teaspoon yeast
1 tablespoon honey
2 1/2 cup warm water
3 cups white flour
1 1/2 cups wheat flour
2 teaspoons salt
2 tablespoons olive oil

Combine yeast, 1/2 cup water, honey, cover and let set for 10 minutes in a warm place until mixture is frothy.
Place all ingredients and the yeast mixture into a bow of a mixer and mix for 10 minutes for a soft dough.
Divide dough into 12 pieces and make into a ball. Cover and let rest until doubled, about a hour.
Pre-heat oven to 550 (my oven only goes to 500 but that worked just fine)
Roll into 16cm rounds.
Place right on to the oven racks (if the bread falls though the rack then place on a cooling rack in the oven), back for about 2 minutes, or until the bubbles are lightly browned.
Pull the bread out of the oven and poke with a knife and deflate the bubbles.

A Bite of the Sun!

This time of year things can look a little gloomy, it's about freezing outside, there is nothing blooming or producing fruit. Or is there? This is where citrus comes in, weather it's a grapefruit, lemon, lime, or kumquat there all delecisious to cook with or to eat right out of the bag. So here's a nice recipe that takes advantage of this wonderful "bite of the sun"!

Butternut squash-tangerine soup.
For the soup.
-1LB peeled, cubed butternut squash
-2 Tbsp chopped ginger
-2 garlic cloves
-1/4 tsp ground cinnamon and a pinch of saffron
-1/4 Tbsp unsalted butter
-5 cups water
-1 1/2 cup fresh tangerine or orange juice
-1/4 cup dried apircots
-1 Tbsp honey

For the germolata
-1/4 cup chopped fresh parsley
-2 Tbsp chopped pistachios
-1 Tbsp minced tangerine or orange zest
-1/4 cup plain yogurt

Saute squash, ginger, garlic, cinnamon, and saffron for the soup in butter in a large pot over medium-high heat. Cook until squash browns, about 5min, stirring often.
Add water, tangerine juice, apricots, and honey. bring to a boil, reduce heat and simmer covered, until squash is tender, about 40mins. Let the soup stand off heat for 10mins them puree in a blender in batches until smooth. Return to heat until warmed though.
Toss parsley, pistachio, and zest for the gemolata together in a bowl. spoon yogurt on each serving of soup, then garnish with the parsley mixture. Enjoy!

*play with your brothers sisters have fun, pick flowers do what ever they like to do.
* paint a picture be creative, lots of colors, mabiey some George Winston?
* make dinner, cook something great.
*take pictures go out side and see things through the view finder that you never saw even though you passed by it a thousand times.
